Irish Moss, also known as Carragheen, is a red alga which grows along the rocky parts of the Atlantic coast of Europe. It contains nearly 10% protein and about 15% mineral matter, and is rich in iodine and sulphur. Because of its abundant cell wall polysaccharides it will form a jelly, and act as an emulsifier and thickener when processed with water.

It can be used in sweet deserts, ice creams, shakes and Etc. And it has became a popular ingredient in raw foods

The “white powder” on that seaweed is a mixture of dried sea salt (our seaweeds are freshly harvested wild seaweeds) and Potassium that is naturally present in seaweeds. During the drying process part of the potassium becomes visible and mixes with the salt on the surface.
